Quinoa & Black Bean Salad

Ingredients:

  • 1 cup quinoa, rinsed

  • 2 cups water

  • 1 can black beans, rinsed and drained

  • 1 bell pepper, diced

  • 1 cup corn (fresh or frozen)

  • 1/4 cup chopped cilantro

  • Juice of 1 lime

  • Salt and pepper to taste

  • Olive oil to drizzle

Quinoa & Black Bean Salad

Instructions:

  1. In a medium pot, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

  2. In a large bowl, combine cooked quinoa, black beans, bell pepper, corn, and cilantro.

  3. Drizzle with lime juice and olive oil. Season with salt and pepper. Toss to combine.

  4. Serve chilled or at room temperature.
